Breakfast Sandwich with Bacon, Egg, and Cheese

Well, I think it’s safe to say that most people are out of summer mode and “back to the daily grind;” kids are in school, summer
office hours are over, and schedules are set.

I don’t know about you, but after about a week of this “back
to school” routine, I find myself scrambling to get out of the door in the
morning. The first week I’m usually pretty good. I wake up easily, get ready
quickly, and don’t feel rushed.

By week two, that’s history. 
My eyes fight to stay open after my alarm goes off and it takes a true force of will to pry
myself out of bed. 10 more minutes of sleep…that’s all I ask :).

This breakfast sandwich was created for those busy mornings
when there is no hope for a relaxed breakfast. It utilizes the microwave, and
comes together in under 5 minutes. (Alternatively, you can also make this on
the stove top, it will just take a few more minutes.)

While I love the speed and ease of this recipe, the best part is that you stay full long after eating it. With energizing protein and fiber in
each ingredient, this simple breakfast sandwich will keep you going all morning
long. So the next time you’re scrambling to get out the door but
still need a well-balanced breakfast, give this sandwich a whirl. I think

Breakfast Sandwich with Bacon, Egg, and Cheese

Serves: 1
Time: 5 minutes

  • 1 high fiber English muffin (I like these)
  • 1/3 cup liquid egg whites (you can certainly sub regular egg
  • 1 slice turkey bacon (can also substitute regular bacon)
  • 1 slice sharp cheddar cheese
  • Cooking Spray
  • Salt and Pepper, to taste

  1. Split your English muffin in half and and toast it.
  2. Fold a paper towel in half around the turkey bacon. Place on a microwave
    safe place in the microwave and cook according to package instructions until
    crispy. (Usually between 30-60 seconds, it crisps up after you remove it from
    the microwave) Tear in half and set aside.
  3. Meanwhile, spray a small 3-inch ramekin with cooking spray.
    Pour in egg whites and season with salt and pepper.
  4. Microwave eggs on high for 30 seconds. Stir. Microwave for
    additional 30 seconds. Repeat until egg whites are fully cooked. (Mine are
    ready after 60 seconds.)
  5. Assemble your sandwich: English muffin bottom; eggs; cheese
    slice, turkey bacon; and English muffin top.
  6. Grab a napkin and rush out the door!
