Mint Twist

I found this recipe in a book Paula gave me for my birthday,The Juicing Recipes Book.  In the book the recipe is titled “Breakfast Mojito”.  But it made me think of alcohol which didn’t sound refreshing for a morning juice drink.  So call it what you will, it’s delicious.

I try to make fresh juice a few times a week.  One of the main reasons is because I love how my kitchen smells after. Yeah, strange, I know. But it’s the same reason I buy certain (more expensive) shampoos and dish soap.

If you skip the nectarine, which I threw in because it was getting so ripe, this drink is pretty low in sugar.

This will last in the refrigerator for up to three days, but they say drinking it right away will give you the best nutritional benefits.

Yield: about 16 oz.
Time: 5 minutes
  • 2 Cucumbers peeled
  • 1/2 – 1 lime peeled (depending on how tart you want it)
  • 1/2 cup firmly packed mint or basil leaves
  • 1 Peach or Nectarine (pitted) *optional

If using a juicer, push the ingredients through the juicer.

If using a blender, add 1/2 – 1 cup of water when you blend the ingredients together
