Avocado with Baked Egg

The past couple of weeks have been crazy-busy. My lists have lists. Today I realized that I had forgotten to eat lunch, but it was getting to that point where dinner was coming up soon and I didn’t want to eat too much to spoil my dinner.

The other thing that goes along with me being super busy is I also forget to shop. I opened my fridge today and found eggs that were expiring in two days and one sole avocado I had forgotten I had. SUCCESS! A quick high-protein snack.

You may want to add some feta cheese, hot sauce or other spices (cumin, paprika, chili powder, even lemon zest) to this simple snack. If you need a quick pick-me-up, this healthy snack is a great option.

Avocado with Baked Egg

Yield: 2
Time: 20 – 25 minutes
Ingredients:
  • 1 avocado
  • 2 eggs
  • salt and pepper

Directions:

  1. Preheat oven to 375F.
  2. Cut the avocado in half, remove the pit. Scoop out more of the inside so when you crack the egg, it all fits in there (mine spilled out a little).  Don’t waste the scooped out avo, it’s perfect to eat while you’re waiting for the rest to bake.
  3. Sprinkle salt and pepper on avocado.
  4. Crack egg and put in avocado. Season egg.
  5. Bake directly on oven rack for 20 – 25 minutes. (The oven rack helps hold the avocado in place)
