Blueberry Mint Juice

It was Farmer’s Market day today and it’s like being a kid in a candy store. I WANT ALL THE THINGS!!! I tried to play it cool. Not seem too excited when the vendors were offering samples of their fresh, farm-grown produce. Alas, they knew as soon as they saw my eyes, they had me hooked. I’d be buying some cucumbers and they’d read me so well, “Don’t you want some tomatoes, we have grapes over there…” You can imagine how the rest of the morning went.

My husband and I always walk to the market, it’s a three-mile walk when all is said and done. It’s a great walk, but we have to not go too crazy with the produce-buying. Again, unsuccessful with that today. Everything was such a good deal and smelled so good and the samples were a nice bonus.

So now my fridge is stocked and mainly smells like mint because I bought a bunch of that too and currently have a pitcher in my fridge filled with water, mint, thyme and fresh lime, yum.

As soon as I got home I had to celebrate my purchases… and make some room in the fridge, so I made juice with cucumbers, mint, spinach and apples all from the market. I threw in some blueberries I had in the freezer too.

They say blueberries are good for your brain, so maybe you can get a little smarter too while you’re enjoying your drink.  ūüėČ

Blueberry Mint Juice

Yield: 10oz.
Time: 5 min.


  • 1 cup blueberries
  • 1 apple
  • handful of spinach
  • handful of mint
  • 1 large cucumber

If using a juicer, push the ingredients through the juicer.

If using a blender, add 1/2 – 1 cup of water when you blend the ingredients together
