Avocado Toast
How many times do you really want to fuss with making a
fancy lunch during the week? For me, I want something quick, tasty and healthy.
Avocado is one of my go-to’s. I’ve been told it’s a “super food”, like you
could live for a very long time eating avocado alone. Though I don’t know if
there’s any food I would be content to eat for the rest of my life.

There’s a restaurant near my old apartment in NYC, Café Getane,
on Jane Street. I love their Avocado Toast. It’s simple and delicious and
always fills me up. This is an ode to those lovely lunches with friends at that
adorable café.

2 pieces of your favorite bread (multi-grain,
French baguette, etc.)

Directions:
1. There
are two ways you can go with this. The first is to toast the bread, the second
is to do what I did in the pictures and make garlic bread out of it. If you go
with that direction, here’s what I did.

2. Heat
up oil in pan with garlic clove cut in half and onion left as a large slice.

Once the garlic and onions are browned, I
moved them out of the way and laid the bread in the oil and toasted it on both
sides.

3. In
a bowl, lightly mash up the avocado and squeeze in lemon juice and salt and
pepper to taste.

4. Spread
avocado mixture on toast and garnish with chili flakes or tomato…or both!
